Ingredients

1 package of chicken breast

1 can of black beans

2 cups of dry Jasmine rice

Bell peppers

Salsa

Sour Cream

Romaine Lettuce

Red onion

Garlic Powder

Onion Powder

Cumin

Paprika or Smoked Paprika

Salt

Pepper

Cajun Seasoning

Lime Juice or fresh limes


Preparation

*THIS DISH CONTAINS CHICKEN TO AVOID CONTAMINATION, MAKE SURE TO THOURGHLY WASH YOUR HANDS AFTER YOU HAVE HANDLED THE CHICKEN OR BEFORE HANDLING ANY OTHER OBJECTS. THOURGHLY DISINFECT THE SURRONDINGS AND AREAS THAT THE CHICKEN WAS TOUCHING OR NEAR. RAW CHICKEN (CHICKEN NOT COOKED TO AN INTERNAL TEMPRATURE OF 165 DEGREES FARENHEIT OR 75 DEGRESS CELSIUS) IS NOT SAFE FOR HUMAN CONSUMPTION. AVOID ANY AND ALL CONTAMINATION*

  • Start by taking the chicken breast out of the package

  • Trim the chicken breast of all excess that you do not want (for me I cut the blood and any fat off the thighs, but just taking the chicken direclty out of the package and not continuing with this first step is fine as well)

  • After you have cut the excess of the chicken breast out, begin to season the chicken breast with 4 dashses of both garlic powder and onion powder, 3 dashes of cumin, as well as 3 cracks of salt and pepper, finally 1-3 dases of paprika (these measurements will have to be adjusted if you have a very large quantity of chicken breast)

  • Next step is to either bake, air fry, or grill these chicken breast depending on your perferred, or easiest method of cooking

  • While the chicken is cooking begin to cook your rice, I use a rice cooker quick and efficent but boiling the rice would work just as well- for 2 cups of rice you will need 3 cups of jasmine rice

  • While the rice is cooking begin to prep your veggies

  • For bell peppers and onions I like to cut them into match sticks, but dicing both of them will work just as fine

  • Next sautee the chopped onions and peppers in low calorie cooking spray

  • chop the romiane lettuce into 1/2 in strips

  • Once the veggies are prepped, its time to start the black beans

  • Put your black beans into a small sauce pan and turn the heat on to medium-low, add in 1-4 dashes of cajun seasoning depending on how spicy you would like your beans

  • Wait until your chicken has reached an internal temp of 165, remove and let rest for 5-7 minutes, then dice the breasts

  • once your rice is finshed cooking, allow it to rest for 5 mintues then add either your fresh limes of lime juice

  • You are ready to bowl! add 6 oz of chicken breast, 1 cup of cooked rice, 1/2 cup of black beans, as many veggies you want, 2 tablespoons of sour cream, salsa and enjoy!
